Wild arctic char have characteristic silvery to ivory skin and deep vermilion flesh. They have big fillets with a high fat content thanks to their rich summer diet in the frigid northern waters. Wild Arctic Char is a very seasonal and exceptional fish in every way.

Wild Arctic char spend the short summer months feeding in the Northwest Passage, building up fat reserves for the long Arctic winter. In early fall, which begins in mid-July, Nunavut anglers begin fishing just as the lakes begin to freeze over. This fishing lasts until the beginning of winter, in mid-September.

The fishing camps, located in the tundra, are only a few minutes by seaplane from the established communities. This is an area where caribou, musk oxen and polar bears roam freely. Each camp is unique, in some of them whole families move in to share the experience. It's a quiet but busy time for everyone involved. It is truly a fishery based on ancient techniques practiced by modern families.

Once the fish are harvested, they are immediately cleaned before being transported to the Cambridge Bay processing plant by seaplane. When the fish arrive, they are batch numbered and processed before being packed in ice and shipped fresh.
