Gaspe Seaweed Pesto

Ingredients

100 gr fresh Kombu Royal seaweed
100 gr fresh Wakame seaweed
1 clove garlic
50 gr of grated parmesan
50 gr almonds or pine nuts
2 tbsp olive oil
1 tsp white balsamic vinegar
 

Preparation

  1. Immerse your seaweed in boiling water for 1 min, then chill them with ice water.
  2. Put all the ingredients in a mixing bowl and mix until creamy.
  3. For use in pasta, rice or as a marinade on a baked fish filet.

Tips

Your Gaspé seaweed pesto will be a perfect seasoning on a fillet of Gaspé charr or Quebec trout.
