INGREDIENTS

2 whole and cleaned Pompanos (approx. 2 books each)
½ Bunch of coriander
1 bunch of asparagus
½ Bunch green onion
1 red pepper
1 clove garlic
3 tbsp.s of olive oil
8 cherry tomatoes
1 lime
Salt, paprika and pepper

 

PREPARATION

  1.  Cut the peppers into strips – chop the onion – chop the garlic and chop the coriander. Add the olive oil, ½ lemon spices in rings and the rest in juice.
  2.  Leave the fish to marinate for 35 minutes.
  3.  Preheat oven to 375 F. on an aluminum foil laid asparagus and tomatoes cut into quarters - add fish and marinade and tightly close the aluminum foil and bake for 25 minutes.

 

TIP

Serve with white rice, add exotic fruits (pineapple, mango, etc.) and / or hot peppers.
