INGREDIENTS
2 whole and cleaned Pompanos (approx. 2 books each)
½ Bunch of coriander
1 bunch of asparagus
½ Bunch green onion
1 red pepper
1 clove garlic
3 tbsp.s of olive oil
8 cherry tomatoes
1 lime
Salt, paprika and pepper
PREPARATION
- Cut the peppers into strips – chop the onion – chop the garlic and chop the coriander. Add the olive oil, ½ lemon spices in rings and the rest in juice.
- Leave the fish to marinate for 35 minutes.
- Preheat oven to 375 F. on an aluminum foil laid asparagus and tomatoes cut into quarters - add fish and marinade and tightly close the aluminum foil and bake for 25 minutes.
