INGREDIENTS
2 pieces of sablefish (300gr)
10 cl of olive oil
1 tbsp miso
1 tsp dried seaweed
1 tbsp by mirin
1 tbsp rice vinegar
1 green onion, chopped
PREPARATION
- Combine the miso, mirin, and rice vinegar in a bowl and set aside.
- Heat the oiled pan over high heat. Cook the fillet skin side down for 5 minutes then turn over and cook for another 5 minutes.
- Turn over one last time and add the miso mixture. Cook for another 5 minutes, basting the fillet with the mixture. Add the dried seaweed and half the chopped onion.
- Finish with the remaining onion and serve.
TIPS
Serve with asparagus and rice.
Can be finished in the oven in broil position for 2 minutes for a nice coloring.
