Trout and Smoked Salmon Tartare

Purchase Arctic Char fillet - 400 gr


125 gr of fresh trout fillet
125 gr of smoked Atlantic salmon
25 gr of trout caviar
1 French shallot
¼ bouquet of dill
3 tbsp Olive oil
Salt and pepper (to taste)
1 lemon


  1. Remove the trout fillet and the smoked salmon from the skin and the black part under the net. Then dice it in small dice and reserve it in the fridge.
  2. Peel and dice the shallots in small cubes. Finely chop the dill and squeeze the lemon making sure to remove all the seeds.
  3. Mix the salmon in a bowl with lemon juice, three tablespoons of olive oil, salmon caviar, dill and salt and pepper. Taste before serving to ensure seasoning.


You can always add to your taste of other spices. Sometimes mayonnaise or tartar sauce and other herbs such as chives or Italian parsley.
