Clams Tagliatelle with Cherry Tomatoes

Purchase Littleneck Clams - 2 lbs

Ingredients

2 lbs Littleneck clams
1 can of cherry tomatoes
250 gr. of Tagliatelle
1 to 2 cloves minced garlic
1 cup of dry white wine
1 branch of fresh thyme
2 tablespoons of olive oil
Salt & pepper to your taste

Preparation

  1. Brush the clams under cold water and put aside.
  2. In a large saucepan, heat olive oil and sauté garlic until golden, about 1 minute.
  3. Add the chopped tomatoes, white wine, clams and the fresh thyme branch. Cover and cook on high heat, shaking the pan occasionally, until clams begin to open (discarding those that remain closed) for 3 to 5 minutes.
  4. Add the tagliatelle cooked al dente, salt and pepper, drizzle with a little extra virgin olive oil, and mix well. Serve with chopped parsley or other fine herb of your choice.
