Soba Noodle Soup

Purchase Nordic Shrimp (fz) - 1 lb

Ingredients

  • 2 carrots, cut into thin slices
  • 1 red bell pepper in strips
  • 2 sprigs of celery cut into bevels
  • 15 g dried mushrooms
  • 30 g of chopped coriander
  • 1 chopped shallot
  • 1/4 red onion, thinly sliced
  • 20 g sesame seeds
  • 3 tbsp of olive oil
  • 2 tbsp of sesame oil
  • 3 tbsp soy sauce
  • 3 tbsp of oyster sauce
  • 3 tbsp from Worcestershire
  • 1 chicken broth cube
  • 2 liters of water
  • 1 pack of soba noodles

Preparation

  1. Cut all the vegetables.
  2. Heat the oil over high heat, add all the vegetables to seize for 5 minutes while stirring.
  3. Add dried mushrooms, chicken stock and sesame oil.
  4. Deglaze with soy sauce and add 2 liters of water and sesame seeds.
  5. Simmer for 1/2 hour
  6. Cook the noodles separately as directed on the package, chill them after cooking.
  7. Place noodles in each dish and add very hot broth. Decorate with coriander.

Tips

To complete this dish, add lobster, crabe, smoked salmon, or cooked shrimp to the broth once ready.
