Razor Clams al Ajillo

Purchase Razor Clams - 1 lb

Ingredients

5 tablespoons of extra virgin olive oil
4 chopped garlic cloves
1½ lbs. razor clams, washed
¼ cup of white wine
½ cup chopped parsley leaves
​Salt and pepper

Preparation

  1. Heat the oil in a skillet over medium heat and add the garlic. Sauté the garlic until golden brown (2-3 minutes).
  2. Increase the heat, add the clams and the wine, and cook, covered, until the clams are well cooked, about 3 minutes.
  3. Add the parsley and season with salt and pepper; saute the clams and let them soak in the cooking sauce for 1 minute.
  4. Serve the clams on a plate and drizzle with the remaining sauce. Serve with home fries or your favorite salad or side dish.
