Ingredients

12 oysters
1/2 red onion, sliced in strips
1/4 cup red wine
1 orange
1 pinch of pepper

Preparation

  1. Using a knife, remove the peel from the orange as well as the white part inside. Keep the bark.
  2. Cut the orange into suprême and then cut into small cubes.
  3. Place the onion strips and the orange peel cut into small pieces in a saucepan with the red wine. Reduce to low temperature for about 30 minutes.
  4. Drain the onion confit and store the liquid. Let cool.
  5. Place the equivalent of 1/2 c. of the onion confit and 1/2 teaspoon of orange at the end of each oyster, so that the garnish is tasted before the oyster. Add a little pepper.
