Fillet of Dore in almond crust and squash roasted with honey

Purchase Walleye fillet - 350 gr

Ingredients

1 walleye fillet without bones and without skin
1 small squash in quarters
100 gr of almonds
2 tbsp Extra virgin olive oil
25 gr of butter
2 tbsp Honey
1 small branch of fresh rosemary
Salt and pepper to taste

Preparation

  1. Roast the almonds at 250 C for 10 minutes then mix to make crumbs.
  2. Place the squash wedges in a baking sheet and sprinkle with honey and rosemary and roast until the squash is tender.
  3. Put the golden fillet with the almonds crumbs and heat the olive oil and butter in a frying pan then stain the fillet on each side then finish in the oven for 5 minutes at 250 C.

Tips

Decorate with a branch of rosemary, with oregano or fresh parsley or with squash, almonds or other roasted dried fruit.

You can accompany this plate with your favorite side, white rice, spelled risotto, a salad or fried potatoes.
