Risotto and Nordic Shrimp Stuffed Calamari

Purchase Fresh Peeled Nordic Shrimp - 1 lb


3 cleaned squid
200 gr of nordic shrimp
1 risotto with porcini and truffle
3 cloves of garlic
20 gr of chopped fresh coriander
20 gr chopped fresh parsley
1 cup dry white wine
1 tbsp Butter
Olive oil
Salt and pepper (to taste)


  1. Prepare the risotto as indicated in the package and clean the squid.
  2. In a frying pan, sauté the squid with a little olive oil for two minutes, then add the risotto, half the coriander and the parsley, then the garlic and the shrimp.
  3. Let cool for 5 minutes and stuff the squid and stuffed with the help of toothpicks. Grill them and then cook for 5 minutes in a frying pan with a broth made up of white wine, butter and the remaining parsley and coriander.


Serve warm with your favorite accompaniment. You can always add to your taste other spices and herbs or choose another kind of risotto.
